Vegetable Salad

Ingredients:

  • Tomatoes

  • 1 ½ cucumbers, chopped

  • Mixed sweet peppers, chopped

  • 3 whole radish chopped finely

  • ½ whole red onion, chopped

  • Mixed leaves, chopped finely to fit in the salad

  • Purple Cabbage

  • Olives, cut

  • Sweet onion, finely cut

  • 1 tsp pumpkin seeds

  • 1 tsp tropical nuts

  • 2 tsp fat free vinegar

  • A pinch of chili

  • A pinch of black pepper

  • 1 tsp olive oil





Method:

  • In a medium sized bowl, dice the tomatoes.

  • Add cucumber chunks.

  • Add the sweet peppers and radish.

  • Stir together.

  • Add the red onion Stir.

  • Add purple cabbages and olives.

  • Add the onion cuts and stir.

  • Add the pumpkin seeds and tropical nuts to the salad.

  • Add vinegar.

  • In a separate bowl, cup or container, add vinegar, chili, black pepper and olive oil. Stir.

  • Add them dressing to the salad and stir.

Preparation Time: 20 minutes

Serving Size: 1 or 2 persons

Chef Tips: ensure to wash your vegetables before using. Radish is very strong so avoid using too much. Avoid washing it in salt water or the texture may be reduced. Adding avocado is optional.
