Ingredients:
· 2 cups plain flour
· ¾ cups cornmeal
· 1 tsp cinnamon powder
· 1 tsp Jamaican nutmeg
· 1 tsp mixed spice
· 1 tsp baking powder
· A pinch of salt
· 2 lb sweet potato, peeled and grated
· A pinch of coconut, grated
· 8 oz yam, grated
· 1 tsp butter
· 1 tbsp vanilla essence
· 2 cups liquid coconut milk
· 1 tsp molasses
· 1 cup brown sugar
For the sauce:
· 4 oz coconut milk
· 2 tbsp brown sugar
· 1 tsp vanilla
Method:
· Preheat your oven. Grease your baking tray and set aside.
· Sieve the flour, cornmeal, cinnamon powder, nutmeg, mixed spice, baking powder and salt .
· Set aside.
· In a separate bowl, add the grated potato, coconut, yam, butter and the liquid ingredients in.
· Stir to combine.
· Add coconut milk. Add molasses and sugar. Stir.
· Add the dry ingredients, one cup at a time, to the moist ingredients and cut and fold.
· Transfer the batter to the greased baking pan.
· Place the baking pan in a tray with water. Cover with aluminium foil.
· Bake for 1 hour.
· Remove from the oven. Set aside.
For the sauce:
· In a measuring cup, pour in the coconut milk and sugar. Stir.
· Add vanilla and stir once more
· Pour on top of the pudding.
· Let it bake for 15 minutes more.
· Remove from oven and set aside to cool.
· Serve.
