Sweet Potato Pudding

Ingredients:

· 2 cups plain flour

· ¾ cups cornmeal

· 1 tsp cinnamon powder

· 1 tsp Jamaican nutmeg

· 1 tsp mixed spice

· 1 tsp baking powder

· A pinch of salt

· 2 lb sweet potato, peeled and grated

· A pinch of coconut, grated

· 8 oz yam, grated

· 1 tsp butter

· 1 tbsp vanilla essence

· 2 cups liquid coconut milk

· 1 tsp molasses

· 1 cup brown sugar

For the sauce:

· 4 oz coconut milk

· 2 tbsp brown sugar

· 1 tsp vanilla



Method:

· Preheat your oven. Grease your baking tray and set aside.

· Sieve the flour, cornmeal, cinnamon powder, nutmeg, mixed spice, baking powder and salt .

· Set aside.

· In a separate bowl, add the grated potato, coconut, yam, butter and the liquid ingredients in.

· Stir to combine.

· Add coconut milk. Add molasses and sugar. Stir.

· Add the dry ingredients, one cup at a time, to the moist ingredients and cut and fold.

· Transfer the batter to the greased baking pan.

· Place the baking pan in a tray with water. Cover with aluminium foil.

· Bake for 1 hour.

· Remove from the oven. Set aside.


For the sauce:

· In a measuring cup, pour in the coconut milk and sugar. Stir.

· Add vanilla and stir once more

· Pour on top of the pudding.


· Let it bake for 15 minutes more.

· Remove from oven and set aside to cool.

· Serve.

Chef Tips: Avoid getting the yellow skin sweet potato. The red skinned potato is best. It’s okay if it starts to change colon when grating. Raisins can be added.

Looks delicious! Can't wait to try it! Chef, can you please tell me the difference between Jamaican nutmeg & 'regular' nutmeg? Sand, if I can't find yams, can I simply add more sweet potato or what would you suggest? Pumpkin? Thank you!
